The Story Behind This Cake
Chocolate da Infância is a tribute to one of Brazil's most beloved bakery treats.
Unlike the coconut cakes often shared at school birthday celebrations, this chocolate cake was the one children dreamed about buying from local bakers and neighbourhood cake makers. Cut into generous squares, wrapped in aluminum foil, and displayed in bakery windows and small shops, it was a simple pleasure that felt like a treasure.
I still remember walking more than 3 kilometres just to buy a piece. Wrapped in aluminum foil and small enough to fit in the palm of my hand, it somehow felt bigger than any treat I could imagine. Soft, moist, and deeply chocolatey, it wasn't just a cake: it was a reward.
Our version stays true to those memories. A tender chocolate cake is generously soaked with milk and cocoa, creating the rich, moist texture that made these cakes so unforgettable. It's then finished with a silky chocolate ganache made with butter and cream, adding richness while allowing the cocoa to remain the star of every bite.
For many Brazilians, this wasn't the cake of special occasions: it was the cake you hoped to find waiting at the bakery, the one worth the walk, the anticipation, and the first bite. Every cake is lovingly handmade in a licensed commercial kitchen inspected by the Windsor-Essex County Health Unit. Every batch is prepared by a certified Food Handler following approved food safety practices. Some products contain tree nuts and other allergens. Although we carefully clean and sanitize all equipment between batches, our kitchen is not allergen-free.
